I have been going to Ambiente since 2004. It is the largest international consumer goods trade show, held annually in Frankfurt, Germany over five days. More than 4,543 global exhibitors participate. I like to attend and walk the show to gain trend knowledge, and see the new product designs and colors. The consumer goods market trends—in dining, giving, and living—gradually spill over into our food merchandising trends and product development. So, Ambiente provides a keen insight into what our customers want and need to effectively merchandise food.
From “bag your own” self-service stations to displays of pre-packaged jerky, retailers are catering to shoppers with this hot food trend. Offering shoppers an opportunity to discover exotic new flavors is a great way to appeal to millennials or foodies from any generation.
Many manufacturers of jerky today are marketing it as a healthy food: a lean protein that is gluten free, without artificial preservatives or flavors. Some of those companies are: Jack’s Links, Krave (now owned by Hershey), and Oberto. Manufacturers are also very wisely marketing jerky as being not just for men anymore. Both men and women are looking for quick and easy ways to get high protein, low carb and virtually no fat snacks into their diets. Jerky fits the bill.
The jerky landscape has changed over the last few years from just beef to other meats such as, chicken, turkey, salmon, pork, bacon, and game (deer, elk caribou, bison). Even South African Biltong has become popular. The introduction of innovative flavors like mango habanero, honey chipotle, sweet sriracha have been also driving sales. Consumers like the choices of artisanal flavors.
Some jerky enthusiasts are also trying their hand at making their own jerky, opting to buy seasoning and cure packs for homemade jerky.
