It was another great year at the International Dairy, Deli and Bakery Association show, but in case you missed it here is a little recap. I would say the theme of IDDBA17 was “The Store Experience.” Consumers can get almost anything they want to find online, so how do you get people back in stores? Provide an in-store experience which brings them in.
The Show and Sell area came alive this year by taking the concept of a traditional full service cheese island and transforming it into a full service Cheese Pub. Complete with ordering stations, bar stools and creative merchandising techniques, the consumer is provided a “choose your own adventure” in the cheese world. The Pub concept includes grab-and-go options for shoppers on the run, or they can sit at the bar for a more intimate experience. The cheese cube cones are a great way to engage millennial snackers with either comfort mixes or gourmet taste.
Create Atmosphere with a Grocerant or an Old Time Bakery
Another highlight was the Boom Kitchen or IDDBA’s take on an in-store grocerant. Sit down in a cozy patio setting under reused pallet light fixtures, and dine in a full service restaurant. Lower the level of the lights, add a small staff with minimal expense you can turn a typical dining area into a true experience for the shopper. At IDDBA, the chefs were fantastic and so was the octopus taco!

Again the traditional bakery format has been turned into a bakery experience. Old wood signs and Edison bulb lights create the feel of an old time bakery shop within a modern store. This setting combined with rustic fixtures and authentic merchandising baskets, providing a clean and appealing look. Inside the case, they used trendy galvanized metal stands to make the items “pop” out of the cases instead of blending in which we see all too often in stores.

Cater to the Cravings of the Next Generation
It’s time to change the shopper’s expectations of traditional grocery and it’s time for traditional grocery to change what they call ethnic food. According to Datassential, “47% of Generation Z (born after 1997) is non-white which means more people are growing up eating a wide variety of food at home. For many, ethnic cuisine is simply cuisine.” Furthermore, IDDBA shared that 53% of population growth by 2020 will come from Hispanic Americans. These dishes can be displayed in traditional ethnic bowls and platters or take a modern twist with wood risers and slate bowls. Whatever you choose they need to be in your store. Cross merchandise on top of the cases provide additional sales opportunities and stand out when displayed in crates or small fixtures next to the cases.

Add Value with In-Store Chefs and Creative Merchandising
Chef Sean O’Neale, the winner of Master Chef season 7, showcased value cuts with a creative spin, allowing stores to extract additional sales and high margin opportunities into traditional undesired cuts. Charcuterie and cheese boards are on trend and hot right now. These high margin concepts have very little cost and can be sold in grab-and-go for a quick pick up, or as a full service, customized option.
The food merchandising on display provided new and executable ideas that can be brought into your store and immediately change the feel or perceived value of the food. Woods and metals dominated the show by highlighting the continuing trends of farm-to-fork and industrial chic in food display.
